Kamosuya

Our goal is to help more people become aware of the richness of our fermented delicacies. Kamosuya invites all to learn and enjoy our local sakes and fermented delicacies in Omi Takashima.

Visit our Stand-Up Bar to enjoy local brands of sake from Takashima’s five renowned sake breweries. Also available are Kamosuya’s original dishes, including foods marinated in sweet amazake and Hishio (root of soy sauce).

We carry traditional fermented foods as well as contemporary fermented items. These include rice-flour yogurt incorporating a lactobacillus derived from fermented cruican carp sushi, adoberry sweets, which are considered particularly healthful, and Takashima’s unique sweets.

This brewery employs the Yamahai-jikomi (yeast mash) process, brewing this sake in traditional wooden vats pressed with weighted poles in a manner unchanged from days of yore.

    Adoberries are actually the fruit of boysenberry plants imported from New Zealand and cultivated in Adogawacho. They have been renamed in order to identify them as a special localized product.

    Plentiful amounts of local Takashima-grown strawberries are soaked with domestic apples in Omiseki vinegar.
    Sour Plum Drink
    Domestic plums are soaked in Omiseki vinegar made from sake. The result is similar to plum wine, but made in vinegar.

    Ginger grown in Kochi, Shikoku, is used to make this easy-drinking vinegar.
